Baked Salmon with Dijon Sauce
- 1 1/2 lbs. salmon
- 1/3 c. parsley dried or fresh
- 1/4 c. Dijon mustard
- 2 Tbsp. lemon juice
- 1 Tbsp. avocado oil
- 1 Tbsp. honey
- 1 1/2 cloves garlic, finely chopped
- salt & pepper to taste
- 1. Preheat your oven to 375 degrees.2. Place the salmon on a parchment lined baking tray skin side down and set it aside.3. Mix together the remaining ingredients in a small bowl and generously coat the top of the salmon.4. Bake the salmon for 18-20 minutes (depending on size and thickness), then slice it into individual portions and serve warm.
My teenage son made this for dinner. It was easy enough for him to make it all by himself, was delicious AND nutritious.
